This wine is obtained following carbonic maceration for 5 to 6 days preceded by hot pre-fermentation maceration (between 50 and 60°C for approximately 12 hours) then end of alcoholic fermentation in the liquid phase (after pressing) at low temperature. These operations allow the optimum extraction of the aromatic potential of the grape variety that characterizes it. Vinification, aging and bottling are entirely carried out by us.
